Chayote Soufflé

Ingredients
3 | chayotes (also known as "vegetable pears") |
3 | eggs |
1 glass | milk |
1 | small onion |
1 | garlic clove |
2 tablespoons | wheat flour |
2 tablespoons | butter |
salt and pepper to taste | |
some parmesan cheese |
Preparation
Peel chayote and remove seed. Dice and cook in salted water. Drain and set aside.
Melt butter in a hot skillet and add the chopped onion and garlic and stir until light brown. Now mix in the wheat flour and also wait until it gets light brown. Remove from heat and add milk by mixing vigorously to avoid clumping. Bring back to heat and add the egg yolks, stirring until boil. Season with salt and pepper and add the chayote slowly.
Grease a Pyrex baking dish with butter and dust it with grated parmesan cheese. Pour in the creamy mixture.
Beat the egg whites until firm and spread over the creamy mixture. Sprinkle on top some grated parmesan cheese and garnish with some sliced tomatoes.
Bake in a pre-heated oven at 180 °C until golden brown.
