Baked Potatoes and Zucchini
|500 g (1 lb)||potatoes|
|300 g (0.5 lb)||zucchini|
|3 tablespoons||wheat flour|
|2 tablespoons||olive oil|
|small bunch||cilantro (coriander)|
|1 teaspoon||powdered, spicy paprika|
|grated parmesan cheese|
Peel and rinse potatoes. Rinse zucchini and cut off the ends. Cut everything in very small pieces (you can also use a coarse grater instead).
Mix the eggs, olive oil, seasonings and the wheat flour in a bowl. Now add to the mixture the finely chopped garlic, onion and cilantro together with the finely cut (or grated) vegetables.
Grease a rectangular Pyrex dish with margarine and pour in the whole mixture. Sprinkle the parmesan cheese all over the top and bake in a pre-heated oven at 200 °C for 30 minutes.
