Baked Potatoes and Zucchini

Easy-to-prepare vegetabale dish with a spicy touch.
Baked Potatoes and Zucchini


500 g (1 lb)potatoes
300 g (0.5 lb)zucchini
3 tablespoonswheat flour
2 tablespoonsolive oil
1 teaspoonoregano
small bunchcilantro (coriander)
1 teaspoonpowdered, spicy paprika
1 teaspoonsalt
1big onion
1 clovegarlic
grated parmesan cheese


Peel and rinse potatoes. Rinse zucchini and cut off the ends. Cut everything in very small pieces (you can also use a coarse grater instead).

Mix the eggs, olive oil, seasonings and the wheat flour in a bowl. Now add to the mixture the finely chopped garlic, onion and cilantro together with the finely cut (or grated) vegetables.

Grease a rectangular Pyrex dish with margarine and pour in the whole mixture. Sprinkle the parmesan cheese all over the top and bake in a pre-heated oven at 200 °C for 30 minutes.
