Beef Soufflé

Delicious dish made with ground beef, vegetables and eggs.
Beef Soufflé


400 g (0.8 lb)ground beef
1 largepotato
1 largecarrot
1 clovegarlic
1green pepper
1 bunchcilantro (coriander)
salt and pepper
grated parmesan cheese


Chop together onion, garlic, green pepper and cilantro and fry them in oil. Season the ground beef with salt and pepper and add to the fry. Toss well until brown.

Peel the carrots and potato, dice them into small cubes and cook in water with a little salt. Drain water and add to the already fried ground beef.

Beat the egg whites first then add the yolks. Divide the beaten eggs in two portions. Use the first portion to mix with the beef and vegetables.

Grease a baking Pyrex form with margarine and pour in the beef and vegetables. Spread all over the second portion of beaten eggs on top and decorate with tomato and onion slices. Sprinkle with parmesan cheese and bring to a pre-heated oven at 180 °C for 30 minutes.
