Beets and Apple Salad
|2 tablespoons||chopped fresh basil|
|1 tablespoon||olive oil|
|1 scant teaspoon||salt|
Rinse and peel both beet and apple. Cut them into very thin slices. Bring beet slices into a large bowl, sprinkle with salt and toss well. Set it aside for 30 minutes.
In a second bowl toss together the apple slices, the basil, the olive oil and the vinegar. Now add the beet slices, tossing well (drain liquid from beets thoroughly before adding to the salad).
You can also use either cilantro or chives in place of basil.
