Cream of Plums Soup

A typically Berliner soup, made with plums, leeks and bacon.
Cream of Plums Soup


1 kg (2.2 lbs)ripe plums
2 stalksleeks
1 podchili pepper
50 g (1.7 oz)bacon
1 cup (237 ml)plum wine
21/2 cups (600 ml)beef broth
salt, Tabasco sauce (or pepper sauce) and oil


Rinse plums and remove kernels. Rinse leeks and cut in small rings. Reserve.

Fry the bacon in hot oil then add the peeled tomatoes and the chili pepper (remove seeds if you don't want it to be too hot spicy). Wait until slightly golden brown then add the plums, leek rings and beef broth. Let it boil for a while.

Remove from heat, wait a few minutes and bring mixture to a blender and blend well. Now add a bit of salt and a few drops of Tabasco sauce and lastly the wine. Bring it back to heat and cook it for another 5 minutes.
