Portuguese Style Chicken
|1.5 kg (3.3 lb)||chicken|
|200 g (0.4 lb)||bacon|
|salt, pepper and vegetable oil|
Cut chicken in the joints, remove skin, and dip chicken in a mixture of water and the juice of half a lemon for a few minutes. Then drain well.
Pour a good amount of vegetable oil in a large pan and bring it to a boil. Add onions and bacon (all minced) until golden brown. Add chicken and salt. Stir well once in a while so all pieces will brown equally. Do not cover casserole completely to prevent excess of water. When cooking is done, sprinkle pepper and chopped parsley, mix well, turn off heat and cover the casserole.
Serve with rice and potato purée.
