Potato Salad

German style potato salad, with apples, ham and preserved cucumbers.
Potato Salad


1 kg (2.2 lb)potatoes
1large onion
1green apple
4preserved cucumbers
1 bunchchives straws
1/2 bunchparsley
4 tablespoonsmeat flavor seasoning Maggi
2 tablespoonswine vinegar
4 tablespoonsolive oil
2 tablespoonmayonnaise
1 teaspoonspicy mustard
1 teaspoonsugar
8 slicesham
pepper and salt


Cook unpeeled potatoes with salt. Drain and let them cool down. Peel, slice them down and put them aside.

Peel and chop onions and preserved cucumbers. Do the same with the apples and chives. Mix the Maggi seasoning, mustard, sugar, vinegar, the olive oil and mayonnaise. Pour over potatoes and mix lightly.

Now bring everything to a rectangular Pyrex baking dish, decorate with rolled slices of ham, parsley and some cucumber slices.
