Ratatouille

Ingredients

1eggplant
1zucchini
1cucumber
3 largepeppers (1 green, 1 red, 1 yellow)
1onion
1 bulbgarlic
2 tablespoonsoil
1 bunchfresh basil
salt and pepper

Preparation

Rinse vegetables and chop into small pieces. Dice garlic and cut the onion into thick slices.

Pour some oil in a large skillet and fry the garlic and onion until light brown. Add the vegetables and season with salt and pepper. Top with finely chopped basil leaves. Cover skillet and cook for 8 minutes on low heat. It may be necessary to add a little water.
