Tuna Square Pockets

Tuna-filled crisp puff pastry.

Ingredients
250 g (1/2 lb) | ready rolled frozen puff pastry |
100 g (3.5 oz) | canned tuna |
1 small | onion |
4 small | preserved cucumbers |
1 | egg yolk |
salt and pepper | |
cilantro (coriander) |
Preparation
Filling: With a fork mash drained tuna and add the onion, cucumbers and the finely chopped cilantro. Season with salt and pepper at taste.
Unroll thawed puff pastry on a flat board dusted with flour and cut it in equal square pieces. Place a small portion of the filling in the middle of each square, brush the corners of the squares with a little water, tie corners together with gentle finger pressure so as to form little square pockets. Brush pockets with the egg yolk.
Bake in pre-heated oven at 180 °C for approximately 20 minutes or until golden brown.
Try other filling options, for example: different types of vegetables mixed with mayonnaise or ricotta cheese.
