Yuca Cake

Delicious cake with accentuated coconut flavor.

Ingredients
1 kg (2.2 lbs) | yuca (same as: manioc or cassava) |
250 ml (8.5 oz) | coconut milk |
2 cups | sugar |
4 | eggs |
3 tablespoons | butter |
200 g (7 oz) | shredded coconut |
1/2 teaspoon | salt |
Preparation
Peel and rinse yuca then cut into small pieces. You can also use a grater for this. Bring pieces (or grated yuca) and all other ingredients into a blender and blend well. Grease and dust a flat, wide pan and pour mixture in. Bake in a pre-heated oven at 200 °C for 50 minutes or until golden brown.
